That's no problem at all. What you have to do is to install ESXi (I assume you already did this) which will format the first RAID set and create a datastore on it. Once installed, use the "Add Storage" wizard and create another VMFS datastore on the second RAID set.
Now you can create your VM on the first datastore and then add an additional virtual disk to it by pointing to the second datastorein the "Add Harddisk" wizard.

Okay, here's what I'm confused about. This is what's available on the 2TB RAID1 SATA disk.
I've created my first data store for 500GB. Okay, so I went back and create another data storage and I do not see any disk/lun being available for creating anymore.
So, what's going on? Am I missing something? I thought since my first data storage is only 500GB of the 1.8TB, I would still have a lot more disk space to create them. Do I understand this the wrong?
